I began canning back when the boys were little and I was a stay at home Mom. It was fun to me and also helped put food on the table and built up our food storage and gave me great satisfaction in doing so!
HOW I LEARNED TO CAN AND WHAT I CANNED FIRST
My mother first taught me along with a Grandmother and friends!
Back then I did all open kettle and water bath methods, No big canner then! primitive huh ! Oh well none of us died and all was good!!
The first things i canned out of my own garden was Green Beans! and lots of them; Then came the Tomatoes with my mothers help! What job with babies! I also canned corn then; but not again I love it frozen best! and besides it was a mess back then! But i must admit it sure did taste good.
My canning skills have improved and so have my tools! I admit I took a break for a few years and had some rust to remove! But all came out well with help of friends and family I’m back on track and always learning new things to do and hope to share them with you !

THIS PAST YEAR I DECIDED TO TRY DEHYDRATING SOME GOODIES FROM THE GARDEN BECAUSE I’M RUNNING OUT OF STORAGE ROOM!!
SO I TRIED A FEW THINGS! Dehydrated Tomatoes



HOW ABOUT THAT! DRIED TOMATOES; I MUST TELL YOU IT SURE TAKES A LOT OF THEM ! BUT AT THE END OF THE SEASON WHEN YOUR TRIED OR CANNING OR THEY JUST PRODUCE A LITTLE AT A TIME THIS IS GREAT! I LOVE ADDING A FEW TABL TO MY STEW OR MIX A LITTLE WATER WITH SOME FOR SOME TOMATOE PASTE.
JUST REMEMBER TO SLICE YOUR TOMATOES THIN THEN ADD TO HYDRATOR TRAYS WITH THE PLASTIC INSERTS AND LET IT DO ITS THING! TOOK MINE A FEW DAYS; THEN REMOVE AND PLACE IN GRINDER TILL FINE AND THEN SPREAD BACK OUT IN HYDRATOR TO BE SURE THE POWDER IS GOOD AND DRY THEN INSERT TO JARS!
AFTER ALL THAT FUN THEN I HAD TO TRY JALIPENO PEPPERS AND GREEN PEPPERS. DRIED IN SLICES AND THEN SEALED IN BAGGIES (VAC SEALED). LOVE HAVING THOSE IN THE WINTER TO COOK WITH!

Well with all this weather I’m getting garden fever!! I wasn’t going to do a garden this year but with my new goals geezz that don’t make sense! Hubby said he would build my garden boxes and order some good black dirt !
My new self -reliant goals well Makes me pretty excited!More canning and dehydrating this coming season and some new Herb beds and more Time to order my organic seeds and plant light to get the seedlings going soon and make my designs for the garden along with some studying /refreshing up on my Herbs and 🌱 plants!
WE”RE NEVER TOO OLD TO LEARN NEW SKILLS!
